A crazy-delicious and healthy way to start your day. These low-carb, high-protein breakfast bars are essentially a baked frittata packed with sautéed vegetables and cheese—perfect for meal prep and weight loss.
Ingredients
Fat
2 tbsp olive oil
Vegetables
1 onion, diced
2 small carrots, diced
1 red bell pepper, diced
2 cloves garlic, minced
Base
4 large eggs, lightly beaten
1 cup milk of choice
Greens & Cheese
8 oz broccoli, finely chopped
1½ cups shredded mozzarella cheese, divided
Seasoning
1 tsp Italian herb blend
Salt and pepper, to taste
Instructions
Sauté Vegetables: Heat olive oil in a pan. Sauté onion, carrots, bell pepper, and garlic until softened.
Mix Base: In a large bowl, whisk eggs and milk. Season with Italian herbs, salt, and pepper.
Combine: Add sautéed vegetables, broccoli, and 1 cup mozzarella to the egg mixture. Mix thoroughly.
Assemble: Pour mixture into a parchment-lined baking dish.
Top: Sprinkle remaining ½ cup mozzarella evenly over the top.
Bake: Bake at 375°F (190°C) for 30–35 minutes, or until set and golden.
Serve: Cool slightly, slice into bars, and enjoy.

I love that there is no meat init. I don’t do pork. This looks yummy and easy. I cant wait until my kitchen is back together try this( though i think I will get my 11 yr old granddaughter to cook with me and make this. She would love it!
