Keto Taco Casserole

Ingredients

  • 1 lb ground beef
  • Taco seasoning (ensure it is sugar-free for keto)
  • 10 oz canned diced tomatoes with green chilies
  • 1 cup shredded triple cheddar cheese
  • 4 eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy whipping cream

Instructions

  1. Brown the Meat: Sauté 1 lb of ground beef in a skillet over medium-high heat until fully cooked.
  2. Season: Add the taco seasoning and the canned tomatoes to the cooked beef. Mix well to combine.
  3. Layer the Casserole: Spray a pie dish with olive oil. Spread the beef and tomato mixture evenly across the bottom. Top with the shredded cheddar cheese.
  4. Prepare the Topping: In a separate bowl, whisk together the eggs, sour cream, and heavy whipping cream.
