Ingredients
  • 8 large eggs

  • 8 oz cream cheese, softened

  • 8 oz butter, softened

  • Monk fruit sweetener (for coating)

Optional Toppings

  • Keto-approved syrup

  • Whipped cream

  • Fresh raspberries


Instructions
  1. Prepare the Egg Loaf
    In a bowl, combine the eggs, softened cream cheese, and softened butter.

  2. Blend
    Use an immersion blender to blend until the mixture is completely smooth.

  3. Bake
    Pour the mixture into a casserole dish or loaf pan. Bake in a preheated oven at 350°F (180°C) for 45 minutes, or until golden and set.

  4. Slice & Coat
    Allow the egg loaf to cool slightly. Slice into pieces and coat each slice with monk fruit sweetener.

  5. Toast
    Heat a pan with a little melted butter and sauté each slice until lightly toasted and browned around the edges.

  6. Serve
    Top with keto syrup, whipped cream, and fresh raspberries if desired.
