Blueberry Cheesecake Squares

These high-protein, low-carb cheesecake squares are incredibly creamy and easy to make! At just 114 calories per square, they’re the perfect guilt-free option for breakfast or dessert.


Ingredients
  • 16 oz cottage cheese

  • 125 g Greek yogurt

  • 2 eggs

  • 4 tablespoons zero-calorie powdered sweetener

  • 1 teaspoon vanilla extract

  • 45 g vanilla whey protein powder

  • 75 g frozen blueberries

Optional Toppings:
  • Powdered sweetener

  • Extra Greek yogurt


Instructions
  1. Blend
    Add the cottage cheese, Greek yogurt, eggs, vanilla extract, powdered sweetener, and protein powder to a blender. Blend until completely smooth and creamy.

  2. Prepare the Pan
    Line a baking dish with crumpled parchment paper to make removal easier.

  3. Assemble
    Pour the blended batter into the prepared dish. Sprinkle the frozen blueberries evenly over the top.

  4. Bake
    Bake in a preheated oven at 350°F (175°C) for 50 minutes.

  5. Set
    Allow the cheesecake to cool at room temperature, then refrigerate overnight so it can fully set.

  6. Serve
    Slice into 6 squares and top with a dusting of powdered sweetener or a spoonful of Greek yogurt, if desired.
