Strawberry No-Bake Low Carb Cheesecake

Ingredients
  • 1 cup fresh strawberries (plus extra for garnish)

  • 4 teaspoons lemon juice

  • 2 cups heavy whipping cream

  • 8 oz cream cheese, softened

  • ½ cup low-carb confectioner’s sugar (Swerve or Monkfruit)

  • 1 teaspoon vanilla extract


Instructions
  1. Prepare the Fruit
    Add the strawberries and lemon juice to a blender or food processor. Blend until smooth and set aside.

  2. Whip the Cream
    In a large bowl, whip the heavy cream until stiff peaks form.

  3. Cream the Cheese
    Add the softened cream cheese to the whipped cream and beat until fully combined.

  4. Sweeten
    Mix in the low-carb confectioner’s sugar and vanilla extract until smooth.

  5. Add Strawberry Flavor
